Sparkling wine, especially Champagne, has been the preferred choice for celebrations of all kinds. Royal, political, national, fashionable, sporting. Whatever the occasion, it has to be sparkling. It is the wine of choice for festive occasions. But just as there are various occasions for which sparkling wine suits, there are many expressions of sparkling wine. Not just Champagne. So, which one to select for a given occasion? Are sparkling wines all created equal? Are they always expensive? (Answer: no!) And how do the bubbles get into the wine anyway? The Dessert wine bracket will consider the wide range of sweetness, the methods by which the wines retain sweetness, including the so-called ‘noble rot’, and the crucial role of acidity to ensure they are appetising.


COURSE OUTLINE
SPARKLING WINES
An aim of this tasting is to consider sparkling wine’s special feature: the bubbles. We will look at various styles of sparkling wine from different countries, consider how you can make quality distinctions in these wines, and finally consider their relative value. You will taste fine examples of Australian Sparkling wine, Champagne, a Sparkling Red wine, Prosecco and Moscato d’Asti.


DESSERT WINES
This bracket will consider a wide range of dessert wines made by divergent methods: the consequences of ‘noble rot’, late harvest and fortification. As such you will taste one of Australia’s unique contributions to the world of wine (Liqueur Muscat) as well as a Spätlese Riesling from Germany and a classed growth Sauternes from Bordeaux.


PLANNED LEARNING OUTCOMES
By the end of this course, students should be able to:

  1. Gain an appreciation of special aspect of sparkling wine (the mousse, or bubbles) and how their styles, like those of other wines, vary according to origin and method of production (including second fermentation in bottle).
  2. Discover a range of dessert wines of different styles and an understanding of how and why they differ. That the key to appreciating them is balance (brought by acidity) and that ‘nobly rotten’ sweet wines can be a practical accompaniment to food while others function best as an aperitif or following a meal.
