Cheese and tea a true delight. Explore the sensational aromas and flavours of complex teas and cheeses. Through this workshop you’ll experience flavours, aromas and textures of Black, Green Oolongs and pu-erh teas paired with different cheeses.


Participants will be able to experience that tea and cheese pairing enhance both the tea and the cheese but also bring out a new, third flavor. The introductory course is ideal for beginners and all those who wish to explore and deepen their knowledge into these ancient natural products. NO REFUND UNLESS WEA CANCELS THE COURSE


COURSE OUTLINE
This course consists of the following theoretical and practical components of tea:


Theoretical component: (power point presentation to supplement theoretical presentation)

  • What is Tea?
  • What are Cheese – origins?
  • Teas: Flavor profiles (white, green, black, oolongs, pu-erh and herbal)
  • Cheese: Flavor, textures and styles (milk of cows, buffalo, goats, or sheep- semi-hard, medium–age cheeses).
  • Serving temperatures
  • Tasting Steps
  • Approaches to perfect pairings
  • Health and nutrition of cheese and tea

Practical component:

  • A detailed analysis with sight, hearing, smell, touch and flavor for each tea variety to be paired with different Cheeses.
  • Distinguishing and describing our sensory appreciation of teas and cheese and founding the third flavor.
  • 3 approaches when deciding upon tea and cheese pairing: Complement / Enhance / Contract or Agitate.
  • A step-by-step cheese and tea tasting based upon all the above information.


PLANNED LEARNING OUTCOMES
By the end of this course, students should be able to:

  1. Know the Tea plant (Camellia Sinensis) varieties and flavor profiles (green, black, oolongs, herbal and pu-erh teas)
  2. Know the Cheese flavor, textures and styles (milk of cows, buffalo, goats, or sheep- semi-hard, medium–age cheeses).
  3. Understand flavor profiles of paired teas and cheese.
  4. Understand tea and cheese pairing steps
  5. Understand tea and cheese nutritious health benefits.
